KUALITAS MIKROBIOLOGI DAN PENGENDALIAN SANITASI MAKANAN ENTERAL DI RUMAH SAKIT UNDATA PALU SULAWESI TENGAH
Abstract
Makanan enteral rumah sakit kaya akan komposisi makro dan mikronutrien sehingga berisiko menjadi sumber pertumbuhan mikroba, langkah preventif uji kualitas mikrobiologi dilakukan untuk menjamin kualitasnya. Tujuan penelitian ini untuk menilai kualitas mikrobiologi makanan enteral rumah sakit Undata Palu dan model pengendalian sanitasinya. Metode observasi pada air dan makanan enteral rumah sakit serta perilaku penjamah makanan. Penelitian dilaksanakan di RS. Undata Palu pada tanggal 4 Juli-31 Oktober 2017. Sampel sebanyak 2 pack perjenis makanan enteral per rumah sakit dengan teknik consecutive sampling. Uji Mikrobiologi di Balai POM Palu meliputi uji angka Lempeng Total, Enterobacteriaceae, Salmonella dan Staphylococcus aureus. Hasil Penelitian menunjukkan tidak terdapat mikroba patogen seperti Escherichia coli, Enterobacteriaceae, Salmonella dan Staphylococcus aureus pada sampel makanan enteral dan air di rumah sakit Undata Palu. Disarankan agar pengendalian sanitasi makanan enteral; pada persiapan, pengolahan, pewadahan dan pendistribusian. Titik kendali kritis yang harus dikendalikan pada proses produksi yaitu pada tahap pengolahan dan kontaminasi fisik seperti rambut, biologi salmonella, shigella, e.coli dan kontaminasi silang alat dan penjamah.
